Clean Eating - Day 2

Day Two... a little easier than yesterday. Probably because I planned for it. After sleeping amazingly well last night, I woke up quite refreshed and ready to take on the day. I can already tell a difference in the way I feel, and I'm loving it! I felt full after each meal and experienced none of the usual bloating & fatigue that I usually get after eating salt-saturated and processed food. Hip-hip-hooray!

Breakfast: My sis inspired me to actually make oatmeal this morning, so I did. I've been stashing away supplies of on-sale oatmeal that I've found in hopes of actually eating it, and today I finally did. I had plain oatmeal with brown sugar, maple syrup, and 1/2 banana. It was deeeee-licious. I couldn't even finish it. I must have made too much. Definitely yummy. Definitely filling.

Lunch: Leftover pasta from last night filled my plate, and it was even better the second day. Raw carrots and black grapes I picked up last night at Bi-Lo (they have the best clearance produce!).

Snack: Smoothie time. Pineapple, coconut flakes, plain Greek yogurt, 100% orange juice, & honey. It was like a pina colada, except not as happy tasting. I should have left the honey out, since I don't like it. I think I was just afraid that it wouldn't be sweet enough. What was I thinking?

Dinner: Tonight's entree consisted of the last chicken tenderloin I had in the freezer (sad day), which I cut up and sauteed in a skillet with garlic, sesame oil, sesame seeds, and carrots, steamed broccoli and brown rice. Simple and satisfying. I sliced some squash lengthwise, tossed it with olive oil, salt, and pepper, and grilled it on the George Foreman. Quick as all get out.

After dinner Dave and I both felt a little hungry. Not sure if it's because we split only one small piece of chicken between the two of us, or because when we were perusing Big Lots tonight we got stuck in the food aisle. We did actually find an all-natural brownie mix, with no preservatives or additives. We looked at the ingredients and were astonished to see that it consisted mostly of whole wheat flour and natural dark chocolate. It was a bit on the expensive side, but we're definitely looking forward to making it.

  1. I want to try the brownies! Maybe we can make some tomorrow, I'm sure they have some cool stuff at Earthfare!
